All of that already exists in the game, actually :)
1, "Quick" Accessible Bar: Just go to "Preferences" > "Quick Menu" > "Enable
2. Show/Hide the UI: Just press the middle mouse button, or click "hide" in the Quick Menu if enabled
3. Skip text: Hold CTRL or tap TAB or click the "auto"/"skip" options in the Quick Menu if enabled
