Making an low poly robots (in the style you wish) is not hard for me. And I have some experience with low-poly sci-fi vehicles /buildings and robots already.
As requirement for you is 256 triangles or 256x256 texture?
Texturing such a small amount will be something new for me, but I think it will be very similar to pixel art , which I also do 😅
