Eye selection doesn't seem to be something possible. Consider XR Replay acts like screen casting. When you do screen casting, you can't change the eye. But you could force the eye selection with QGO.
QGO has some kind of admin possibilities so it can force some devices settings. It's a great tool for everyone and will make all your Quest games better :)
