Hey! I've got your bundle but it still only let's me get the DEMO Variant of this UI Pack instead of the Full Version

Sure, thanks for letting me know. I'll contact itch.io and they might be able to help.

My guess is that this is happening because the original pack price is $7.99 (discounted - 5.50$), while the bundle price was 6.50$. For some reason it may be using the original price instead of the discounted price to consider whether you should receive access.
