Hello, and thank you for the question! I would choose one of the Non-Combat stats listed in the book based on how the party wants to approach the situation. For example, if they're being quiet and careful, Finesse could be an option; if your players are trying to perform especially intense stunts to get by them, Acrobatics might be better; but especially crafty plans might roll Intellect instead to have them go off without any trouble.
I'd take a look at the Using Non-Combat skills (page 20 of the current handbook) to see which Non-Combat description feels best for your party's situation - there's also a guide for difficulty on this page that'll help determine their outcome.
