No, I don't think you can manage to destroy everything. Definitely not with the bombs (since you only have one per character) but I would guess it's not possible to break everything else within the time limit either. You'll just have to settle with trashing as much as possible and getting out of there so you can do it again another time! :D
Yes, the stealth/vision system is not very sophisticated unfortunately! I'm not actually a programmer by trade, I started out as an artist, so my tools are a bit limited, haha. One of the things that could definitely be developed further. Hopefully it doesn't break your immersion too much :P
