This is my opinion.
I am not a 2d artist, and I am not a musician. If I had to make that song I don't think there would be a game to show you in 10 days.

I have done 3d art for a solid 10 years as a hobby and working with game engines off and on for over 3 years.

If we are talking about a triple A title where they are firing 80% of their artist to use ai and charging 70-80 usd for their title then yes I would agree with you that I am not a very big fan of ai. 

but in the setting of a solo dev or a very small team making a <25$ game I don't blame them for using a little ai here and there. if the person is really good at story telling and 3d art but cant texture or code. I would hope they would use a little ai to take the load off in them areas where the individual is not very strong so that it gives them the freedom to tell the best story they can without having to remove parts. if they had to struggle doing things they are not good at it will effect other aspects of the experience. 

a good example here is that like I said I am not a musician, if I had to compose a song it wouldn't be as good as the suno song, it would have taken allot longer because of that fact. it would have taken time away from the things like 3d modeling animation etc. it would have taken time away from tweaking the bow and cable mechanic and the activation things etc. overall the song adds to the atmosphere and helps to create a vibe and it freed me up the time to working on the things I am good at so I can give the player a better overall experience.

as a side note, I actually do try to avoid ai when I can help it and the course in particular I was hoping to get out of this game jam was actually the music composition course. I would be the first to admit music composition is a major weakness of mine and I would definitely like to compose my own music if I could.

You don't need to compose the music, there's no shortage of people offering to compose music for free at game jams. Many composers, including myself, have had a lot of difficulty finding a team to participate with. In other words, there are many composers without teams. Besides, many composers participate in several jams at the same time, so it's really not difficult to find someone for your team.

maybe so but then that would have required myself to take the time to coordinate with another person that I don't know and work with them to get something that fits the game. I have full time job and it was enough work just getting the 3 of us that already hang out coordinated to do this.

at the end of the day I didn't break any rules, ai is accepted. I wouldn't have even needed to state I used it but I was being transparent and I also didn't have to give any outside entities access to my private git server which is also a security concern.
