Hey there, how would you recommend to open these so they can be accessed? The cross-legged one is just what I need, with the animations to stand up and down. But, now that they're in my Unreal engine 5 project, I can't figure out how to target them to any skeleton that will let me actually view the animation.

I would recommend watching some UE retargeting tutorial. There are some good ones out there that can also explain how to retarget from the UE4 Mannequin to the UE5 one.
I have not done it in a while so I sadly am not the best person to explain this.

I was working on this the last few days. One issue I discovered is that the skeleton that was shipped with the assets may not be, or include, the skeleton that goes to the animations?  I wasn't able to assign the packaged skeleton to the assets, which confuses me and I was wondering what skeleton they are made for precisely.

Yes, as far as I can remember, you will need to do retargeting. So put the animation from one skeleton to another.
There are a few tutorials and if you follow them, you will be able to use the animations on another skeleton.

Yes, I've retargeted before.
In order to retarget anything I need the OG skeleton asset, otherwise the engine cannot map the original bones on to the UE5 bones. Right now I cannot even watch the animations play in editor. The problem is the "from one skeleton" part of the "from one skeleton to another". In order to retarget to UE5 I need the skeleton they shipped with. Your asset that I gave you money for doesn't include it or includes some kind of broken version of it. I realize now it is kind of my bad purchasing a years old pack for UE4, but no one can help me obtain the original skeleton except you.
