Hey there- With a lot of work, probably. I've never worked with the Game Boy, but you'd have to process the tileset first to make it compatible with the limited color palette. This tileset also uses 16x16 tiles, which are a little big for the GB's small resolution, but it's not impossible. I'd recommend creating a tileset from scratch for that purpose.
