When I want to open the game it tells me The application "V1.04_Raft_MacUniversal" cannot be opened. I am on Mac OS Catalina v10.15.5

Highly likely it's a 32-bit application and Apple removed 32-bit support from MacOS a while back.

You'd have to revert your MacOS back to version 10.14.6 (Mojave) or older. Considering the itch.io version has not been updated for over 3 years (MacOS/Linux versions even longer) it's unlikely devs are going to fix it (it's unlikely they could even if they wanted to).
