it's not exactly a tutorial, but to get back to the opening segment you can talk to the miko at the bell shrine and ask about giving up your memories (this will reset progress)
alternatively the room can be reached again with the debug controls to go back to rm_tsuru_boss_room, i think. The instructional dialogue there mainly tells you
- use deflect (dash) to reveal weakness on enemies
- grab is used by pressing a direction (left or right) and heavy attack when very close to an enemy
- the dash's deflect window can be extended by holding down the dash button for longer
- you can burst to escape from being combo'd with light attack + heavy attack at the same time
