I'm new and wanted to ask two simple questions: 1. If I download this version, when the new one comes out, do I have to reinstall the entire game, or can I just download the content added in the update? 2. When I download the updated version, will my saves from the previous version remain?

Each version needs to be downloaded again.
On PC, you can uninstall the game without any issues, your save files are not stored directly in the game folder.
On Android, the current version is simply overwritten when you install the new one, so you can continue using your save files normally. However, if you uninstall the game, those save files will be deleted as well
