A lot of devs will release a demo that helps create an audience for the game before it's officially released. Creating dev logs can also help.

If you're set on breaking up your game into stand alone games, you could call the stand alone games "chapters" to make it obvious that they're part of something bigger (similar to what Poppy Playtime is doing)

It's not that I'm breaking up the game, I have an idea to use several mechanics in it differently and I also heard that it's best to make several small games before you make a new one, but I'm not certain you guys are more experienced at this.

It's true that I'm not an experienced game dev, but I have been on this platform a while as an artist and have seen what works and what doesn't work. That said, it sounds like you already have your heart set on a plan, so best of luck in your endeavors : )
