I like your engagement into the art but I tink you could move into 16px or 8px art to make it easier to do. It's pretty challenging to start with art in higher resolution and care about art etc.
Game design is pretty ok, I got the idea. You must protect, take care about gold and coffee. Probably this game could move into some tower defense direction? Maybe you could prototype with other perspective like vampire survivor with your extra mechanics of gold and coffee?
