You should try to balance each of the bars depending on your answers and feel free to use rollback if you end up shattering a bar by accident.

For reaching the other routes:
Simon: Don't sit still during the chapter 3 attack on the castle. Snoop on Isaac fighting at the front gate and when he's distracted, escape the castle.
Anthony: At the beginning of chapter 3 take a walk in the courtyard and notice the vines growing on the wall. During the castle attack, escape from the wardrobe and try to escape from the courtyard.
