I’ve purchased the bundle myself, and I can confirm that when you are about to download a game, you get the option to choose the platform.
I’ve heard that in the Itch’s native client this happens automatically, but I’ve never used it myself, so keep that in mind.
Having said that, when you buy a game, you get access to the files for all platforms it supports.
