Not sure what happened, but this happened while using the Itch launcher. Whatever, no issues, I started the game from the install folder, and after running the game from the actual exe from the folder, I have no save file. Aside from that, I am loving the demo so far. Put probably 10+ hours into it, trying to farm and whatnot, so rather unfortunate to lose my progress, but I guess I know now to not use the Itch Launcher.
