As a more concrete answer, the waterfall sometimes have some little “shining” effect that appear repeatingly after a dozen seconds, if you try to fill a bottle at that time or very shortly after you get a gem :)
Ah, I see. The problem was I had no way to empty the jar at that time and clicking the waterfall with it full doesn't work for getting the gem. Thanks for the help.
