Sorry to hear about the pain point with the first Minotaur, possible bug their - not an intentional punishment condition ^^. I'll invetigate to see what may have happened and look to get that fixed.
I've had similiar thoughts with the boss battle too, will definatley look at balancing it (a place for improvement for sure.)
I think increasing the current length of coyote time may help make the jump feel more forgiving and fair.
After defeating the Boss you get an item that gives you the power to interact with those blocks :)
Can definatley add a jump key to the ZXC, will get this implemented asap. Gamepad support is also in the plans too.
If you do play it again, please do let me know if you have any further thoughts - really valued.
