What I would recommend, because I was in your situation last summer, as a new gamedev using AI to even an innocent thing like trying to learn with it. Will, send you down a rabbit hole of "Well I don't know how but AI can so I will just use that!". What that does makes it, so you don't understand the program, and it really isn't your own. I would recommend joining as many jams as you are willing to do, not at the same time, but not too spaced apart. My first jam, I had 4 days, and I only got the movement working. But I learned and by my 2nd I had enemies and a moving background, it wasn't a full game of course though but by each game you learn, and it is a whole lot more valuable than AI. So, I would recommend trying to recreate a simple older game like pong or block breaker. I am fine with engines but only using a language is a lot better for helping you learn, like Python I would recommend.
