not a weird question at all, I got the same request a couple of times!
One output per stream is definitely possible in VST and CLAP but I could not get it working in AU. Didn't spend much time on it, so definitely worth giving it another shot at some point.
Full multichannel support won't really work in emergence, so maybe in a new plugin
