There are a lot of cool dithering techniques around and I'd love to see them in PixelOver.

Sure, I'll with add that in the future. I thought also about something to generate dithering from a balck & white image to do custom dithering scheme.

ah that's a very cool idea actually. bayer and the b&w masks could be run in a shader, too. except floyd steinberg variants.
another useful inspiration could be "8bit photo lab", but I'm sure you're aware of that one ;)

Totally agree, having dither options would be really useful. Dither styles can change the whole feel of an image or game. I’ve been experimenting with this myself and built a small free web tool to test different dither effects quickly — sharing in case it’s useful: Dither Image Online
