Can i update the game after the 15th ?

I made Rolling Ball but while exporting it I made a mistake and I'm trying to correct it . So can we change the zip given for the jam after the time of the jam.

Or make a different project as Rolling ball v2?

You can do whatever you feel is best, it's a personal challenge not a competition where there's someone going to be affected by your changes!
