Thanks for your reply but I'm a bit of a simp. I was wondering if I extract the new version of the game file, will the save file not be overwritten? And what do you mean by "save file is outside game folder"? If you're not annoyed by this, please help me.
Why would I be annoyed? You're asking a genuine question.
As for your question (I assume you play on Windows PC) let's say you downloaded the game and extracted it to "C:\Users\<username>\Desktop\REC" so there you have a All game files, except the save data which in turn is stored in "C:\Users\<username>\AppData\Roaming\Godot\app_userdata\REC"
So even if you were to delete the game files at "C:\Users\<username>\Desktop\REC" your save file is safe and accessible for newer versions.
