If you're using v81, you must use the connected setup method.
The Settings app you are looking at is the Quest settings app, not the Android Settings app.
Please look up how to set up and use ADB on macOS, and then execute 'adb tcpip 5555' as instructed.
Update: The new online installer now works on Windows, Mac, and Linux.
On-device setup has also been completely re-imagined to support Quest OS v81 and newer.
