theoretical shortcut (you bounce on the side of that block and try to land on the border of the map and then drive to the finish)
I'm trying to find a cut too... I think it might be possible to ride the side of the block you originally bounce on and drive sideways on the border to the finish. It would be really hard to time but it might be possible.
Or you could hit the track corners In a way so that you are launched upwards and somehow land on the border or finish line.
