Thank you for the comment! I definitely dont want to fully scrap the sprites either after getting so far into them and the games progress, but I still wanted to make an educated decision by getting some of y'alls input before i fully decided on anything.
Right now we're actually leaning towards the 3rd option because someone reached out willing to help complete the sprites that need to be shaded still!
