I just finished replaying it with the update and I love it. Curious about whether the next update will focus on the story on another Grind'm character, and if so, who.

Glad you enjoyed it! The next update is a story update that picks up where the current version of the game ends. It primarily focuses on Matt and Evan with a secondary focus on Marco and Leo, but it'll touch on everyone's story in some manner.
The third Grind'm scenario will be with Parker, but I don't know when that will be done. I'm focusing on the next update for now.
