One thing I noticed- at the moment, the only way to get Earth magic is to choose it from the very start; at least, I’ve never found someone to train the character in it. That kind of feels like an oversight, given how all 5 other elements are trainable as soon as you first leave with the party.

Not really an oversight, the earth magic trainer just took a lot longer to introduce than I had expected. Alicia will be here soon enough.

out of curiosity, will Kandros or Siofra be instructors for more advanced magic in their respective elements?

Also, any possibility of Metatron teaching some of her celestial martial art to the MC? Would be pretty cool to combine it with Ashley’s Nether martial arts.

Regarding Metatron martial arts... not immediately. Maybe down the road, or an offshoot of them, or it may be locked to Aether corruption path only.

Siofra will be the Zephyr magic teacher (wind, focused on spirits) and possible spirit summoning and advanced fire magic. Kandrs will likely be (name TBD) tide/deep water magic and possibly advanced water. Succubus mom will likely be advanced nether. I haven't finalized all of the details yet.

Well, since I’m guessing we haven’t even reached the halfway point yet, I’d rather surprised if you did have all the details finalized lol. Having dabbled a bit in writing and game design, I understand how complex things get.
