The dice do look at the scores of other dice though, not just their face values! The scoring works from left to right, so you need to think about how to order your dice in order to make the best use of them.
You can check the description for a more detailed explanation of how each dice works. I appreciate that we did not make it super clear in game, and we didn't have time to make a tutorial, my apologies!
