You hit the really big ones, but there are some obscure Yokai I know a bit about like Hamaguri nyōbō (clam wife) that would have been fun. Given how important birds are in core, I would probably done a variation of the tongue-cut sparrow as well. Now that I think about it, a "festival" themed Myth would have been good too, maybe Tanabata-ish? There's a lot of potential I feel hidden away in the mythos of other cultures that I would really like to see explored more. Did you see the one centered on Korean mythos? Highly recommend it, even if it's rather brief since the creator said they ran out of time (so consider it a teaser).
The one with with knight with the mochi hammer, right? Yea that one was cool.
I compiled a whole list of stories and ideas - the tongue-cut-swallow was on it - and also asked the in-laws for their favourites. Ideas involving torii gates, fox yokai, lion-dogs.
Besides myths, on my list are also a bunch of knights - the traditional samurai, but also warrior-monk, shinobi, etc. Also think some castle, shrine sites would be cool. In fact, I had trouble coming up with a myth for urashima taro, but just today realised it would make an interesting site.
