Let enemies come to you by pressing the wait key. Spending your turn by moving into melee range means the enemy gets to attack you once for free.
You can also keep one or two extra weapons in your inventory to throw at enemies to get some attacks in before you start melee combat.
Stocking up on strength is always good since most attacks in the game make a d20 hit roll vs AC, and strength buffs both hit and AC.
