Wow, incredibly ambitious and well-excecuted!
Airplane mechanics were relatively realistic, challenge level was high, and you nailed the them!
My recommendation is to let the player sit a little higher in the seat, and maybe make the airplane turn while banked instead of needing to pull back for every turn.
