I agree that the payment processes are the bullies here. But if Itch fought back they might go bankrupt and completely shut down and a lot of it's employees will be out of a job. Also, Itch utilizes "Open Revenue Sharing" lets sellers dictate how much percentage of money is given to the platform, by default is 10% but can be lowerd to 0%, and all payment processing fees are handled by the seller. (Source: "itch.io's Open Revenue Sharing") In contrast to Steam which takes 30% by default which is the industry standard and handle the fees for the payment processors.
