Unity does work on Linux but it is up to the developer to compile an executable for Linux. Source: I play a lot of Unity games on my Steam Deck, both on the Arch-based SteamOS and then after switching with the Fedora-based Bazzite to use since general use purposes since my Deck is my only computer.

I agree that the payment processes are the bullies here. But if Itch fought back they might go bankrupt and completely shut down and a lot of it's employees will be out of a job. Also, Itch utilizes "Open Revenue Sharing" lets sellers dictate how much percentage of money is given to the platform, by default is 10% but can be lowerd to 0%, and all payment processing fees are handled by the seller. (Source: "itch.io's Open Revenue Sharing") In contrast to Steam which takes 30% by default which is the industry standard and handle the fees for the payment processors.
You do not need to manually uninstall the game because if you do you will lose your saves you just need to need to update the base APK.
All Ren'Py game saves on Android are stored in "Internal Storage/Android/data/[internal packagename]" the internal packagename is the used when compiling the APK.

Itch used to have a mobile client but Itch's lead devoloper abandoned it as he was busy with the desktop version. Since the source code for versions of the Itch client is hosted on GitHub, a developer named gardenapple created a new mobile client called Mitch that converts Itch's website into a standalone app which will notify you when there's when you log in and download the game using the app. I'm writing the comment by using Mitch:

I know I'm but late like said in my you can transfer saves using the Android version. Because the Android version uses the Webview app which stores files in an inaccessible directory if you don't have root (administrative permissions) on your phone. To get around this limitation I use an app from Patreon called JoiPlay.

The developer already said why he doesn't do a standalone application for Android because it's too big. You don't need to download all of JoiPlay's plugins just the two required for Ren'Py games. With JoiPlay you can have all your games in one launcher and you don't have to a lot of icons on your home screen or app drawer.
