I really enjoy the premise of this.
Here is a little play report:
Recently I gm'd this, and the players hadn't had any idea what to do anymore after two stages of hunting (setting up traps, preparing for the troll to appear and baiting it with whiff), went pretty effortless thanks to their dice. The stage tables didn't deliver much of a threat or distraction to them.
In the end I let them fight the troll right after an uneventful stage 3, which then also went pretty easy for the players and only one of them took 1 hp damage, caused by himself.
I really wanted to try out the chase as well, but the troll died so fast as they want straight for the weak point of the rot fang.
For the next time, I'd leave it by 3 hunt stages (stage 2 to 4) and I would enhance the troll HP a bit.
All together, it was still a blast and I'm looking forward running a campaign for my players traveling the dying lands in their carriage, weakening HIM and HER by killing there troll breed one by one.
