Idk who the creator of last remnant is (great track though), but I do know how to make the thin ribbon you speak of. Basically, just take normal road pieces or turns and use the axis rotation to flip them sideways. Simply place two of them back to back, and the edge of both road borders is what you're actually driving on. I hope this is clear enough for you to understand!
