Okay, on further investigation we see this is a Mac build which went up onto Itch in error - apologies but it won't work on Itch due to how Mac security works. However, there will be a Mac version available via Steam for now. Again sincere apologies about the mistake there.
Steam says: "Notice: This product is not compatible with macOS 10.15 Catalina or above. Click here for more information."
