There likely won't be permanent changes outside of various end game epilogues as your being human is relevant to the main storyline, but if I add in modding support, I may add that in as an optional module a player could download to change their base form into something different.
I'm not sure when the 1.0 release will be, but it'll unlikely be anytime this year. I was hoping to have the game out on Steam in Early Access sometime in 2025 but I'm not as far along with the main storyline so that's uncertain now.
