Eye color is definitely on the list. Achievements and rewards for both careers are coming in the next update, but they'll be pretty basic. All the progress-related stuff is aimed for v1.5.0-alpha3, which is going to be a big update.
I like the idea of 'unrevealing' your character's face if there have been significant changes. Definitely considering it.
Every part of a character's body is editable, but there are no sliders for it. You can shape your character's body with workouts and maintain it with diets (which are coming in the next update).
