Zen is the panther witch that runs away from you in the Witch's Library. To re-encounter her, bring Cassidy's history cookies with you into the Witch's Library and the option to lure her out will appear.
I plan to make this easier to figure out in 0.6.0 by giving Tori and Pixie more dialogue about training Zen and her weakness for baked goods.
