Yeah that could work. Let me know if and where you set that up (you could just have a second itch page for it maybe? or would that be considered cheating by the judges? I don't want to get you into any unforeseen trouble as a result :|)
Sent you a DM on RMW. The lag is quite awkward, but it is what it is I'm afraid... Although I was thinking... wouldn't it work if you just copy-pasted the windows files into an RMMZ project on Mac and hit playtest...?
