Hmmm, if you could send me your save at unifoxgamestudio@gmail.com, that would be really great.
I don't get any problem with more than 100 character, so maybe it's something in your save directly, and I could resolve it, for the next release.
Also you could get the player log after a crash, it's located here :
"AppData\LocalLow\Unifox Game Studio\Nymphomania Fantasy Town"

Okay I found a fix for you to do.
I was abble to reproduce, using your save, the said problem... once 😅
It seems to be caused by the working clothes set. If you open your Worker Sanctuary and every clothes set, it should fix your problem.
I'll dive deeper into it to try to find the problem about this...

Since I posted this it's crashed even when not much is happening. There's no consistency to it that I can see. "At once" more meant having multiple characters working at the same time that others are going through Academy classes, one after the other. Since then though, it's crashed when only a few characters are working and I'm not even touching anything. Wish I could be more help.
In addition to the info and files I sent over, I figured out a workaround that seems to be holding up. If I get more than 40 workers, and any of them run out of Stamina, a crash seems to follow. But, if I assign their work via the Worker Sanctuary and set the minimum Stamina threshold around 10-15%, they never hit 0, so no crash happens. Hope that helps anyone else who may be having this issue.
