That just means the creators of those games don't have a developer certificate from Apple. The only way itch.io can help is if you use the official app.
It is downloadable on the app. But for some reason the website doesn't work. I discovered this after the post.
That's why it doesn't work: because most creators here can't afford to get their apps certified.
