What happens after defeating the final boss of the fortress? I know the gallery is unlocked but I don't have everything. I'm missing things and I don't know what to do next.

If you're missing things, it's stuff that maybe you can craft or cook from dropped items. It's not necessary for the game but something to mess around with if you'd like.
