Loremaster in-training here, but I'll attempt to explain what I know.
The way human-hybrid's work in the game's setting is that they can "sprout" and start looking like their anthro genetics. It's sort of shown by the MC having full-black hair when he was younger and getting his white hair later. My assumption is that later in the game you'll have some choice that'll determine whether you sprout as a full anthro, stick to just gaining ears and a tail, or stay human-looking.
The dev can correct me if I got something wrong (full honesty I have not played it, just read comments/seen screenshots, so I could be off-base.)
