is there a max number of dice you can have or do they just get less and less common?
Yes, there is a maximum of 10 dice that you can have. I may choose to change that in the future depending if I can scale the game further. But right now, once you have 10 dice, they will no longer appear in the shop.
I guess that's the reason helmet didn't work.
