No to everything! You won't be able to disable anything, you can only avoid stuff or decide to not unlock the events in the first place. Technically there is a non-ntr route (that will eventually have its own ending) but it doesn't offer much content except some more cute moments.
I don't plan everything ahead of time when it comes to H scenes. There are some key moments and the rest we come up with whatever we feel like. Who knows what it'll be at the end!
It's not explained yet but from the two main characters you can assume that everyone else looks exactly like their avatars in real life too. Well, not exactly. In Luna's case she definitely increased a certain slider...
