The "voyeuristic activities" have been delayed for 7.11, apologies for the confusion!
For the image gallery in your phone, most of them will tell you what day and time of the day the item can be found, its just a case of searching each of the rooms. There are some secret items too, but none of them are missable!
In regards to the scene replay, there's a few missable scenes at the start of the game (if you have, you can start a new game and just speed through to get them, they are within the first 0-30 mins of the game).
Lost and Found Part 7 (Potion minigame) also has some missable animations so its worth making a save before doing that event!
