How does one actually improve her diving? I Improved it from 5 to 10% But I couldn't figure out how to do more, and trying my luck at 10% 15 times in a row didn't work out for me lol.

Her diving improves based on the first time she fails each diving spot. The diving is usually just a chunk of treasure so I recommend going around and failing all the diving spots first before trying to farm anything.
There's a bit more info regarding diving and treasure calculation at the home area under the manual section now. I'll be adding stuff to there in the future.
Ah, then my game must of bugged at some point, upon getting to the 3rd level I believe, I had gotten stuck in the wall (before this latest update) and so I had to close it and reopen, and I tried the other diving spots in other levels (like the one with salt water when you tell her to blink a lot and what not) and it stayed at 10% throughout all of it.
